Mauviel copper cookware is the unquestioned world leader in professional copper cookware and has been for as long as I can remember. If you consider yourself a great chef, then you’ll really want a set of these for your kitchen. The only downside is their price, they’re extremely expensive. They make the pricey All-Clad stuff look like toys!

The difference between stainless steel and tin is a fairly high. Tin requires much more careful cleaning and can scratch much easier and can also wear out over time, after which you must have it retinned by a professional. Also tin melts at 460° F so be aware of that. Stainless steel, on the other hand, is much easier to use and will last longer, possibly forever. Some chefs prefer tin because they say food doesn’t stick to it as much, and it heats more evenly, but I’m not sure if this is worth the extra hassle.
How Much Will You Pay For Mauviel Copper?
This is the kicker… Mauviel cookware is among the most expensive in the world, but for good reason. Individual pieces can range in price from $200-$500 per piece. An 11.8 inch Cuprinox round frying pan, for example, will set you back $340.

To give you an example, I want to look at one popular set that they offer which costs $1,350. It contains two saucepans with lids, a sauté pan with lid and a copper brill cleaner. This set has stainless steel interiors and cast-iron handles.

On the other hand this nice little set only cost about $650 and gives you a 1.8 quart saucepan with lid, 3 quart sauté pan with lid, and a 10.2 inch fry pan all with extra thick 2.5 mm copper exteriors and stainless steel interiors with double cast-iron handles.
