First of all, just so that we’re all on the right track I should really define roasting pans. In my opinion, it’s a pan that you use to roast things under a broiler in the oven. This is probably the most inexpensive roasting pan that they offer, at $240. It’s made out of seven ply material with a multilayered 18/10 stainless steel layer, aluminum layers, magnetic stainless layers and another stainless outer layer. It is 2.6 mm thick and has a very nice polished exterior.
Mauviel Cuprinox Style 16-by-12-Inch, 8-1/2-Quart Copper Roasting Pan
At $585 this is a slightly nicer version that is great for turkeys or a leg of lamb or even rib roast. It has a 2 mm copper exterior and a stainless steel interior that heats quickly and then cools very rapidly when you take it off the heat. It has an 8.5 quart capacity and a lifetime warranty.
Mauviel M’Heritage 13-1/2 by 9.1-Inch Rectangular Roasting Pan
At $460 this is a very interesting pan that is made of 90% copper and 10% 18/10 stainless steel. It has cast stainless steel handles and the entire thing can be used on both gas or electric as well as induction or halogen, and of course in the oven as well.
So there you have three basic options when it comes to a Mauviel Roasting Pan. One things for sure, these aren’t cheap and you get what you pay for when it comes to Mauviel. Quite frankly, they should last forever and you’ll be hard-pressed to find a higher quality roasting pan on the market today.
